Ingredients
  • 2-3 tbsp olive oil
  • 1 large sweet yellow onion (finely diced)
  • 1 large carrot (finely diced)
  • 2 medium celery stalks (finely diced)
  • 3-4 cloves fresh garlic (minced)
  • 3 bay leaves
  • 2 tbsp fresh basil, (finely chopped)
  • 1 lb fresh ground beef
  • ½ lb Italian sausage (sweet or hot)
  • 16 oz organic tomato sauce (2 cans)
  • 6 oz organic tomato paste (1 can)
  • Salt and Pepper (to taste)
  • ⅛ tsp red pepper flakes (optional)

Instructions
  1. In a large pan (or Dutch oven), over medium heat, sauté the onion, garlic, celery, and carrot in olive oil until tender and translucent. Add beef and sausage and cook until browned. Add tomato sauce, tomato paste, bay leaves, and basil. Add optional red pepper flakes. Simmer for about 45 minutes to 1 hour. When a dark, rich oil bubbles to the surface in a few spots, the sauce is done. Add salt and pepper to taste.
