Lemon Syllabub
    For Version 1: Lemon Syllabub with Apple Juice
    1. Zest and juice lemon. Place all ingredients in large mixing bowl. Beat with an electric mixer until thick and slightly stiff. Spoon into dessert or parfait glasses. Garnish with lemon, mint leaves and raspberry. Chill until ready to serve. Serve the same day. Serves 4-6
    For Version 2: Lemon Syllabub with White Wine
    1. Whip the cream and sugar in a chilled bowl until the cream begins to thicken. Add white wine, lemon juice, and lemon zest, whipping until light and fluffy. Spoon into dessert glasses. Garnish with lemon, mint and raspberry. Chill until serving time. Serve same day. Serves 4-6.
