Ingredients
  • 1 cup raisins
  • 1/4 cup red wine vinegar
  • 2 teaspoons sugar
  • 3 cans no-salt-added chickpeas, rinsed (15.5 ounce cans)
  • 1 cup fresh flat-leaf parsley or cilantro, chopped fine
  • 4 scallions or green onions, thinly sliced
  • 1/3 cup extra virgin olive oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper or to taste

Instructions
  1. In a small saucepan, combine the raisins, vinegar and sugar and bring just to a simmer; remove from heat and let cool. In a large bowl, toss the chickpeas, parsley or cilantro, scallions and raisin mixture with the olive oil, cumin, salt and pepper. Serve immediately or refrigerate for later.
