Ingredients
- 1 cup raisins
- 1/4 cup red wine vinegar
- 2 teaspoons sugar
- 3 cans no-salt-added chickpeas, rinsed (15.5 ounce cans)
- 1 cup fresh flat-leaf parsley or cilantro, chopped fine
- 4 scallions or green onions, thinly sliced
- 1/3 cup extra virgin olive oil
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/2 teaspoon pepper or to taste

Instructions
- In a small saucepan, combine the raisins, vinegar and sugar and bring just to a simmer; remove from heat and let cool. In a large bowl, toss the chickpeas, parsley or cilantro, scallions and raisin mixture with the olive oil, cumin, salt and pepper. Serve immediately or refrigerate for later.
