Ingredients
For the Dough:
  • 1 1/2 cups warm water
  • 2 teaspoons dried yeast (1 packet)
  • 4 cups plain flour
  • 1 teaspoon salt
  • 1/2 teapoon sugar
  • cornmeal (optional)
For the Sauce:
  • 1 28 ounce can whole, peeled tomatoes in juice
  • 1 medium sweet yellow onion, finely diced and minced
  • 2 medium cloves garlic, minced
  • 2 tablespoons olive oil
  • 3 to 4 fresh basil leave
  • 1 teaspoon oregano, fresh or dried
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • pinch of red pepper flakes

Instructions
To Make the Dough:
  1. In a bowl or measuring cup, add water and sprinkle yeast over top of water. Stir gently and then let sit for about 10 minutes. In a large bowl, add flour, salt and sugar. Make a well and pour yeast into the center. With a fork, slowly begin incorporating yeast into dough until dough comes together and becomes too hard to mix with your fork. Flour your hands and begin to make it into a ball. Knead the dough on a floured surface until you have a smooth, springy, soft dough ball. Place dough in a lightly greased bowl. Cover with a kitchen towel or plastic wrap and let double in size, about 45 minutes. Meanwhile make Pizza Sauce!
To Make the Sauce:
  1. Pour tomatoes into a mixing bowl and crush. In a medium saucepan, sauté onions and garlic over a medium high heat and cook until translucent. Add the crushed tomatoes, stir and bring to a simmer. Add basil, oregano, salt, pepper and red pepper flakes. Simmer on low for about 20 minutes.
To Assemble the Pizza:
  1. Preheat oven to 450 degrees. Divide the dough into 4 balls. (Balls can be wrapped and frozen for later.) Flour and cover balls with cloth. Let rest for 15 minutes. Dust surface with flour. With rolling pins or by hand, create the desired shape and thickness of pizza. Sprinkle a little corn meal on baking sheet and place pizza dough on top. (If you don’t have cornmeal, sprinkle just a little flour.) Spread pizza sauce over dough and top with your favorite pizza toppings. Drizzle a small amount of olive oil over pizza. Bake for 15-20 minutes or until bottom and sizes of pizza are golden brown. Serve immediately.
