Cut the crust off the bread and cut it into cubes. Mix eggs, milk, sugar, vanilla, cinnamon and salt, whisking to combine. Pour egg mixture over bread cubes and thoroughly soak cubes. Add 2 tablespoons butter to a skillet. (If making bacon as a side, keep a tablespoon of bacon fat in the pan in addition to the butter) Cook bread cubes over medium high heat until golden, rich brown on all sides. Dip into maple syrup and enjoy!
