Crispy Oven Fried Chicken with Creamy Parmesan Sauce

She stole the show, but I stole her recipes! Phoenix resident Janne Mahan is a dietitian and corporate trainer for Bosch and Thermador appliances. A big part of what Janne does is prepare and share entire meals that can be done quickly, with very little fuss that produce over the top flavors. I sat in on her class this week when she made Crispy Oven Fried Chicken with a creamy Parmesan sauce, bright and flavorful roasted broccoli and sautéed mushrooms with browned butter, lemon, garlic and thyme. Let me just come clean. The meal was so delicious that I nabbed her entire menu so I could share it with you! Thanks Janne, for looking the other way.

Ingredients
For Crispy Oven Fried Chicken:
  • 1/2 cup butter, melted
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoons kosher salt
  • 1/2 teaspoon pepper
  • 2/3 cup panko or bread crumbs
  • 1/2 cup crushed cornflakes cereal
  • 1/2 cup grated Paremesan cheese
  • 4 chicken breast cutlets (about 1 1/2 pounds)
For Roasted Broccoli:
  • 3 1/2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon crushed red pepper
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 pound fresh broccoli florets (about 8 cups)
For the Creamy Parmesan Sauce:
  • 2 tablespoons butter
  • 1 tablespoon all-purpose flour
  • 1 cup whole milk
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
For the Roasted Cremini Mushrooms:
  • 1/4 cup butter
  • 2 cloves fresh garlic, minced
  • 1 teaspoon fresh thyme, chopped
  • 1 tablespoon fresh lemon juice
  • 1 pint sliced Cremini Mushrooms

Instructions
To Make Crispy Oven Fried Chicken:
  1. Preheat oven to 400 degrees. In a medium bowl, stir together butter, mustard, salt and pepper. Combine panko, cornflakes, and Parmesan in a second shallow bowl. Dip chicken in butter mixture; dredge in panko mixture, pressing to adhere. Place on a baking sheet lined with aluminum foil. Prepare broccoli and then bake chicken and broccoli in separate pans at the same time for about 17 minutes or until chicken is crispy and cooked to 165 degrees.
To Make Roasted Broccoli:
  1. Stir together oil, garlic, red pepper, salt and pepper in a large bowl. Add broccoli, and toss to coat. Transfer to a rimmed baking sheet, and roast at 400 degrees until broccoli is browned and tender, about 17 minutes.
To Make Creamy Parmesan Sauce:
  1. Melt butter in a 3-quart saucepan over medium-high. Whisk in flour and cook until thickened. Gradually whisk in whole milk. Bring to a boil, and cook, whisking constantly, until thickened, for 1 to 2 minutes. Whisk in grated Parmesan cheese, fresh lemon juice, salt, and black pepper. (If too thick, add more milk.) Serve immediately with chicken.
To Make Roasted Cremini Mushrooms:
  1. In a skillet on medium high heat, cook butter until browned. Add garlic, thyme, lemon juice, salt and pepper and cook for 2-3 minutes, stirring often. Add mushrooms and stir to coat. Cook until caramelized, about 7-8 minutes.
