Chilled Southwestern Veggie Medley
    Instructions
    1. In a large bowl, combine the black beans, corn, red bell peppers, garlic, shallots, salt, pepper, sugar, olive oil, Dijon, lime zest, lime juice and ½ cup cilantro. Stir well to combine and refrigerate. When ready to serve, add the chopped avocado and gently mix to combine. Garnish with remaining cilantro. Serves 8.
