    1. Butter an 8-inch square baking pan.

    1. In a medium saucepan, combine brown sugar, granulated sugar, corn syrup, heavy cream, and salt. Heat on medium, stirring to dissolve the sugar.

    1. Insert candy thermometer and cook until mixture reaches 238 degrees (soft ball stage).

    1. Add butter and stir until melted and fully incorporated. Remove pan from heat and let mixture stand undisturbed until mixture cools to lukewarm. (about 115 degrees.)

    1. Add vanilla and beat vigorously with a wooden spoon until smooth and creamy and begins to dull. Fold in optional pecans.

    1. Pour into prepared pan and let harden. Cut into squares. Store in airtight container.
