- 2 pounds Gnocchi (2 packages)
- 8 ounces mascarpone
- 2 scallions sliced fine
- 2 bunches asparagus cut into 1-inch segments
- 1 cup shredded Parmesan
- 2 1/4 cups water
- salt and pepper to taste

Instructions
- Add all items to a large pot and cook on medium heat for approximately 15 minutes, stirring occasionally (until the sauce thickens). Recipe can easily be cut in half, just reduce cook time to around 10 minutes.
