Roasted Veggies in a Cheese Crust

Melted cheese over steamed vegetables has been has always been a popular side dish. But when I came across an old Iowa Farmer’s Almanac recipe for roasted vegetables served in a cheese crust, it turned everything upside down for me and became one of my favorite ways to enjoy seasonal produce. The instructions were as follows…

“Roast over a hot fire, one handful each of four or five vegetables in season. Make a crust of cheese and cornmeal. Use crust as a plate to serve vegetables in.”

I need no excuse to channel my inner farm girl, so I went right to the task of figuring out what kind of heat would equal a “hot fire” and which vegetables would taste best snuggled in a cornmeal and cheese crust. Whether you take my vegetable suggestions, or choose your own combination, you’re going to end up with a delicious festival of flavor in a savory cheese crust!

Chili Verde with Cornmeal Dumplings

I’m always looking for “the one.” You know, the one recipe that you can count on time and time again to be a crowd pleaser. Sometimes you’ll send me recipes with in-depth stories about the memories behind the meals, which I love. Sometimes I’ll simply get a recipe saying it’s a family favorite. I’ve come to know that if you believe the dish is good enough to pass along, more than likely it’s a winner, and I’m grateful that its landed in my lucky hands. Now you have another one in the Southwest cuisine category–a fabulously simple, incredibly tasty recipe for New Mexico Chili Verde. There’s a great technique in the recipe that really adds to the flavor of the chile verde, one that I have come to use often in stews and chili’s. It’s flour that you heat up in a dry skillet until it turns light brown and imparts an amazing toasted nut aroma. Get those flour tortillas warmed up and pour yourself a big bowl of New Mexico Chile Verde!

Chicken Enchilada Soup with Cornmeal Dumplings

Here in the Southwest we love or Hatch Chile season! We’re right in the middle of the harvesting these flavorful versatile chiles that are known for their perfect balance of sweet and heat. Besides elevating the taste of enchiladas and rellenos, we also love hatch chiles in stews, soups, sauces and even smothered on burgers. In my opinion, there is no better hatch chile then when roasted or charred. It’s easy to do on an outdoor grill, in the oven, or with a grate over your gas cooktop! Just keep turning the chiles until they blister, place them in a Ziploc back while still warm and let them sweat. he charred skin will come right off and then you can scrape the seeds out and dice! While you can used canned chiles for this Chicken Enchilada Soup, the hatch chiles takes the freshness and flavor to a whole new level! Oh! And those cornmeal dumplings? The perfect topper to a this hearty Southwestern favorite!
