Sweet and Spicy Chicken Skewers with Udon Noodle Salad

The origin is said to be Persian or Turkish, but there’s no denying that kebabs have been part of our American culinary lexicon for centuries. We love our Shish Kebabs skewered and roasted over an open flame. We love our kebabs marinated and slathered. We love them with lamb, beef, chicken, pork, vegetables and even fruit. There are never enough ways to enjoy kebabs. Plus, they’re so easy to prepare! This recipe for Sweet and Spicy Chicken Skewers takes the flavor to a new level. Of course, our palate can never get enough of the taste bud teeter totter of spicy and sweet, salty and heat. That’s why you’ll grab just one more skewer, and then maybe one more after that. You’ll notice there are two types of heat in this dish; chili paste and hot sauce like Sriracha. It certainly can kick up the heat, but the flavors from the two chile sources are so different, that it just adds to the overall profile. If you’re not a fan of super spicy, just reduce the chile paste and hot sauce by half and then proceed ahead to a delicious supper on a stick!

Garden Churkey Burger

The Story

You’re looking for something yummy and a little different for your Memorial Day menu. You’re trying to eat lighter. You’re craving a burger. You’ve come to the right place! How about a Churkey Burger? It’s a delicious combination of ground turkey and chicken (no, it’s not redundant… really!) with moistness and flavor added to the mixture from pesto, onion, and crushed red pepper. Then, once it is grilled to perfection, top it with avocado, sliced tomato, onion, arugula, and your favorite cheese. Your craving is about to be satisfied! So why use both ground turkey and ground chicken? You could certainly use just one or the other – they’re pretty much equal in calories, fat, and protein. But while turkey has a nice flavor, it tends to be a bit dry. Chicken, it seems, has a little more moisture and it acts more like ground beef when mixed together with other ingredients for patties. Add the pesto for even more moisture, and the Churkey Burger becomes a hearty and satisfying alternative to the usual burger fare. Now here’s a tip for a delicious condiment for your Churkey Burger: if you have some leftover pesto, let it drain through a sieve to get most of the olive oil out. Place the pesto in a bowl, add a little mayonnaise, and stir. It makes a wonderful slather on your bread and the perfect complement to the burger. Dive in and enjoy!

Earthquake Cake

The Story

Would a girl like me, who loves to shake things up in the kitchen, pass up a recipe with a name like Earthquake Cake? Not a chance! It’s recipes like this that I hope to run across every time I buy old recipe boxes at antique stores. Sadly, more and more stores are discarding the recipes and just selling the boxes. But I’ll travel miles out of my way, hoping to find that over-stuffed, often disorganized, box of recipe treasures. Those were somebody’s go-to recipes, and many of them are now mine. It was in one of these old toll-painted, scuffed up boxes that I found a dessert that shook the earth and sent shockwaves through me… okay, that’s a little dramatic. But, actually, Earthquake Cake, I discovered, is fantastic tasting and a lot of fun to make because the center sinks and the sides rise, and in the end, it all mixes together into an ooey, gooey volcano of chocolate goodness!

In researching the Earthquake Cake, I found that it was categorized as a convenient “back of the box” cake and that had many recipes call for German Chocolate cake mix in the batter. Since the version in my old recipe box had “one rich chocolate cake mix” written on it, that’s what I opted for. But I think either a German Chocolate or regular chocolate cake mix would work just as well – it’s just a matter of personal preference. It goes together very easily – just a simple layering of ingredients. Finally, here’s your early Earthquake warning: as you watch the cake bake, it may look like a wreck as it shifts and bubbles over itself. But I can tell you one thing: you won’t find a fault with this lost and found Earthquake Cake.
